What you put into your body influences your fitness, energy level and well-being. We’re not going to go all fanatical on you and recommend you cultivate your own rooftop organic microgreens, but there are ways to eat healthier without sacrificing taste.


Sole with Bulgur Pilaf

Ingredients:


  • 1 Cup Medium Bulgur
  • ½ Small Red Onion, minced
  • 2 Tbsp. Margarine or Butter
  • 2 Garlic Cloves, minced
  • 1 Tsp. Ground Coriander
  • Coarse Salt and Ground Pepper
  • 8 Fillets skinless Sole or other mild white fish
  • Lemon Wedges
  • Italian Parsley

Directions:


Preheat oven to 400F.

In a 9”x13” baking dish, combine bulgur, onion, margarine/butter, garlic, coriander and 1½ cups water. Season generously with salt and pepper; mix to combine and spread evenly in dish.

Season each fillet with salt and pepper; roll up and place on top of bulgur mixture (2 rows of 4). Season again with salt and pepper.

Tightly cover the dish with foil and bake until bulgur is tender and fish is opaque throughout – approximately 25 minutes.

Serve fish with bulgur pilaf and garnish with lemon wedges and parsley.
