What you put into your body influences your fitness, energy level and well-being. We’re not going to go all fanatical on you and recommend you cultivate your own rooftop organic microgreens, but there are ways to eat healthier without sacrificing taste.


Soy Glazed Salmon

Ingredients:


  • ¼ cup packed light Brown Sugar
  • 3 Tbsp. Olive Oil
  • 3 Tbsp. Soy Sauce (light sodium)
  • 3 Tbsp. Fresh Lemon Juice
  • 2 Tbsp. Dry White Wine or Water
  • 4 Salmon Fillets
  • Lemon Wedges, for serving

Directions:


Preheat oven to 400F; position a rack in the centre.

Preparing the glaze: In a small bowl, stir brown sugar, olive oil, soy sauce, lemon juice, and white wine until the sugar has dissolved.

Cut salmon fillet into 4 equal-size pieces. Arrange skin side down, in a single layer on a baking dish. Pour glaze over the fish, and turn to coat evenly.

Bake until fish is opaque but still bright pink inside, basting every few minutes with glaze from baking dish, 15 to 20 minutes. Serve with lemon wedges.
